I'm kind of embarrassed that I can't find a decent answer to this question.

Can you have a dual external monitor setup on your typical laptop? Including the laptop's screen, this would make for 3 screens total. What kind of hardware/ports would a laptop need to support this?

Some solutions I've seen involved USB monitors, but I've heard less than ideal things about them, especially regarding lag.

Usually you need to have some kind of USB->VGA/DVI/etc adapter to use the third monitor, but I think Ivy and Haswell laptops can support 3 monitors if you have the right ports.

The USB adapters/displays are fine for doing normal things, but there will probably be significant additional latency if you're trying to game or something... USB 3 should make things a little better, though.

Many business/workstation laptops will do that, since they have docking stations to add additional ports.
Few gaming laptops can do it too, it is up to the manufacturer to add enough ports in the laptop :)

GPU-wise you'll need rather new Intel cpu with integrated graphics or Radeon 5xxx / Geforce 6xx generation or newer (not the low-end models though).

    Thanks for the responses guys.

As far as ports go, would something like VGA + HDMI work?

If your third monitor is the USB adapter, that's fine. If your third monitor is the internal display, I think the other ports need to be DP or something that passes DP (not 100% sure on that though).
