uthall, I think you are probably most interested in gaming keyboards (right?) and others will have better recommendations there than I, but if you ever end up wanting an ultra-sexy, Bluetooth, not-so-gaming-oriented one, the Logitech diNovo Edge has it covered in spades (for now.)

Madcatz R.A.T.7 mouse for me - I prefer the wired version to the wireless (R.A.T.9) version. However I always disassemble my mice and shorten the cables to a more laptop friendly length and I have to admit this is the most difficult mouse to dismantle I've ever tried.

alienware tactx keyboard= awesome

I love my Logitech G700 mouse. I've been shopping for a gaming keyboard and will probably get a Deck Legend.

I use the DECK Legend (Mechanical Keyboard) and either a G500 or Deathadder

There are so many options out there its beginning to be a matter of what feels good in your hand. Which sucks because , at least around here, theres not a lot of places to get your hands on one. I really really wanted the optx mouse, but my big ole mitt swallows it and it isnt the most comfortable for ME. Its an awesome mouse tho.
I have a rat 7 at home and is sweet since it is customizable. However my son hates it, he swears by a Saitek gm3200 mouse, which is nice but rather inexpensive. ($35?)
Same with the Keyboards. I love my tactx keyboard but a Saitek eclipse 2 has a better feel to ME. -
Mice usually depend on whether you're a palm or grip user. If palm, I recommend the Razer Deathadder. Razer Mamba if you prefer wireless. But best bet is to try out several mice to get the feel.
