I just got an HP ZBook 15 and don't like the power adapter that comes with it. It doesn't fold up and fit into my laptop bag very well. Does anyone make any aftermarket power adapters that work with laptops and have good cord management?

What do you mean exactly by it doesn't fold up? The ZBook 15 is a pretty power hungry laptop, so your options will be limited.

Also, anyone knows if HP has a chip that checks for power rating and such in their PSUs like Dell does?

Yes, they do so OP's options are quite limited to none.
