2. How is it that a headset can be Wireless, Bluetooth and NFC....? If it's just Wireless, but not Bluetooth nor NFC, does this mean the audio signal would have to go through a router?

Most surround sound headsets that I've used are just stereo headsets with an included external USB sound card that is responsible for processing the surround effect. Headsets that contain multiple speakers are gimmicks, the speakers are not far enough apart to provide true positional sound. Any surround effect with headphones must be simulated.
A plain wireless headset usually uses some kind of dongle that plugs in via USB, whereas a bluetooth or NFC headset would interface with the internal Bluetooth/NFC radios inside your computer. -
Also, multiple drivers means cheaper drivers in the same price envelope than two drivers with emulated surround.

You only have two ears, so more than one speaker for ear doesn't do anything. Two speakers, one independent speaker per ear, is all you need, and in fact ideal, for any sort of surround sound. The only trick is in processing the audio that gets sent to the speakers.
Also, no, if it just says wireless, that means it uses its own closed protocol for wireless data, nothing more. It would come with its own wireless dongle to transmit from the computer to your headphones.
