I was just wondering if I connected a normal laptop with a resolution of 1366 x 768 to an HD 1920x1080 monitor via HDMI, would I get the full HD or would some quality be lost?

Depending on your GPU, but most of the new ones allow separate scaling of the monitor and your laptop LCD if you're using extended desktop (not cloning).

Yes, if you choose the right settings, you will have no quality loss and you can utilize the 1080p of your ext. monitor.
