When I go into my BIOS and to the performance tab, the only adjustable things are :
1.CPU vcore level
2.DDR3 voltage
3.CPU Frequency Overclocking - Disabled (and grayed out)
does anyone know why the OC tab would be gray and inaccessible? can this laptop be OC'ed? thanksoh, btw, here is dxdiag

I believe that OC tab is only enabled when you have one of the Extreme Edition processors, ie. a 920xm or 940xm.
If you're looking for more speed, I would recommend getting a 920xm ES/QS chip from ebay...they go for something like 200 USD now or less. Once you have one of those chips in your R2, then look at a nifty program called Throttlestop. You can just ignore that OC tab completely and set the overclocking using the software. Can set it up so that the chip will go full turbo boost to 3.4/3.5GHz(or something like that) or all 4 cores at same time! Awesome bang for buck upgrade IMO -
There is also unlocked A10 bios, wich will allow to OC your CPU.

Won't you have a huge problem with throttling and temps by OC all 4 cores?
I tried doing some OC using Throttlestop and used Prime95 with 8 threads for stresstesting, maybe that's the problem? I mean, its kinda unrealistic that all 4 cores and 8 threads are used simultaneously during gaming or other activities. What settings should be used in Prime95 to figure out if an OC is stable (temps are good and no BSOD)? -

My i7 940xm when turbo boosting to 25x multiplier on all 4 cores and set to 90/85 in throttlestop gets to very hot temps when using intel burn in test 95+.In real world test such as video encoding and transcoding using ps3 media server it gets to about 80ish. To boost the multipliers past 25 you have to increase the CPU vcore to 75w. Changing the multiplers to 27x 1core 26x 2cores and 25x for 3 and 4 cores gave me lower benchmarks in cinebench and wprime95 I asume this is beacuse of higher temps so more throttaling of turbo boost it also gave me a lot higher idle tempratures so I stop doing it. What gives the extreme processes better performance is changing the thermal limits (I think that what they are called) in throatle stop so that the processor can tubo boost for longer and there by giving you better performance.

Would I be able to do that? I mean, with my laptop, would I be able to put that chip in and have it run with everything else on my laptop? Also, would it be as simple as plugging it into a socket? Or would I have to be a bit advanced to do this? Thanks.

Yeah the CPU upgrade is a pretty straight forward process. I know laptop monkey on e-bay is a fantastic seller (I highly recommend him) if you are looking to buy a 920/940, and it'll run just fine with all your other hardware. If you've ever replaced a CPU on a desktop, the same principle applies to the laptop.
Also there are several links to disassembling the R2...it's not hard, but take your time and go slow, also make sure you invest in some high quality premium thermal paste for the CPU and might be worth replacing the thermal pads on the CPU heatsink as well. -
The R2 has a pretty good cooling system IMO, and yes I do get "some" throttling issues if I run Prime95 with 8 threads, but that's after I've adjusted my TRL settings to 90/75. Even then, it just throttles to less than a full 25x multiplier on all cores, temps head towards 95c, but its no biggie. Never BSODs.
During normal operation(and running other benchmark/stress tests like TS benching), it doesn't throttle at all.
