For some reason, My computer keeps changing the msconfig settings to set the number of cores and amount of ram to use which causes a BSOD. This is the second time that it's done it by itself in a month and a half. Why is it doing this??

If you have system restore running, turn it off... perhaps it is "restoring" your faulty settings.

Why would it restore automatically without my permission?

Perhaps your OS is hosed? Have you tried booting into Safe Mode and trying to system restore?
