So I was fixing a friend's M17X R4 and noticed he only had 1 GPU, does that mean that the 17 inch Alienwares both the M17X and the Alienware 17 only take 1 GPU and not 2 in SLI?

Yep, the M17x R1 and R2 can take two gpu but for the other it's just one.

When the technician came to my place to replace his GPU on his M17X R4 I only saw one slot for the GPU, where is the other?

    The M18x was the replacement for the M17x R1 and R2. The M17x R3 and R4 replaced the M15x

    No, only one mxm slot.

    double gpu 17" : M17X R1 , M17x R2
    single gpu 17" : M17X R3 , M17X R4 , Alienware 17 ( or R5 if you prefer )

Newer does not necessarily mean better.
