Any reason as to why these two GPUs don't seem to be working as intended? I've updated the drivers and have the most current version of Catalyst Control Center.

Is the xFire enabled in the CCC ? What games are you having issues with? Can we have your full specs?

Yes, crossfire is enabled in CCC and just about every game gives me low framerates, chop, or, stutter. I have a Intel Core i7 x920 @2.0 ghz with turbo boost, dual ATI Radeon 5870 HD Mobility crossfired.

Is this suddenly happening out of the blue? Does this only happen with specific games?

Could be a number of things... Anything from the fact that they simply can't handle the games, to one (or both) of the cards dying.

Seems like just about any recent titles (FFXIV: ARR, COD, TERA)...

Should I try to overclock both of the cards, or, will doing that probably brick both of my GPUs?

I didn't test any new games, but my 5870 XFire/840QM setup could breeze through everything I tried in my Steam library at 1920x1200 (Amnesia, Doom 3 modded, Starcraft II, whatever other stuff I tried). I would remove old drivers, etc. and do a fresh install to see if anything changes. Run Afterburner or something similar to check your temps and GPU usage as well.
