I have searched the forums for a previous answer but couldn't find one, Is there any way to change it so the Dell Audio IDT volume screen doesn't come up when I raise/lower the volume using the buttons, it is mildly annoying when I am playing a game and try to change the volume but am booted out of fullscreen.

Download OSD from support if the volume screen is missing.

What driver are you using? Supposedly the newest OSD driver from Dell for the M17x R3 clears up that issue. If not then try to use the M18x one.
