So I haven't even received my system yet, but I'm rethinking the 3d rig. Do you think that if I'm not pleased with performance, Dell with allow me to exchange it for a non-3D setup with the 6970m?

You can return the system within the xx-day satisfaction guaranteed period (21-days USA+UK, 30-days Canada, ??? elsewhere) for a complete refund. Dell exchanges are typically only for the exact same system (minus whatever tech problems you had).

Yeah. Even after owning this r3 since Jan 30, Dell won't exchange for a new system with the specs they're offering me (for free as an upgrade).

I had to return + re-order with a discount code.

That sucks... I don't want to be without a comp for another month

Guess I could just drop the 485m in there

I'm sure if you explain what you intend to do you can setup to have new order properly expedited.
Also, if you have the funds to do so, you can order new one before returning the old.

    I dunno man

"properly expedited" doesn't really mean anything to them from what I gather

So, since it won't happen in at least a week, did you consider calling order modification department? you can tell the person you wish to modify the order, if he/she refuses to do so, you can tell 'em you want to cancel the order. Moneyback happens in most cases in 48 hours since cancellation. Whatever they tell you, NO RESTOCKING fee applies; you are eligible for complete refund even after (21 days (US) as someone else pointed out) since you receive the system.
And: it is extremely hard to make the sales rep to expedite the order, if there is a possibility, I would shoot for asking OMD (call back when you receive the money, tell that you canceled the order before, ask if they can help you to expedite the new order) Initially before my order got canceled by dell, this worked for me. OMD rep called sales rep, while i was on hold, and then the usual story.
