I've tried looking for the dimensions of the SSD required for the m17x, but I can't seem to find them. This is probably a dumb, noob question though...but should the SSD dimensions be 7mm or 9.5mm?

All SSD's are 2.5' so don't need to worry about the dimension.
IIRC only the Samsungs are 7mm compared to the usual 9mm.
But even then they will fit just fine, so nothing you should focus on.

yes me too were in the same prob b4 i got my m17x
i went with the samsung 830

any 2.5' SSDs should work since there are actual holes with which u can fix your SSD to the laptop

so it doesnt matter whether the thickness is 7 or 9 mm, since the holes are in the same place

No, NOT all SSDs are 2.5". OCZ made the Colossus series in 3.5" form factor, plenty of 1.8" mSATA SSDs and mSATA in mini PCI-E format SSDs. To answer your question any 2.5" 9.5mm SSD will work in the R4. You may not want to buy a 7mm or remove the shim on a 9.5mm SSD as it may not line up or screw into the caddy, have had numerous issues with other computers.
