The R3 can be bought with up to 12 GB of memory. However, Intels spec shows that Sandy bridge memory controller can only use 8GB of memory. Intel Sandy Bridge 820 specs
Anyone know why they offer more memory than the controller will use?

You are confused man. What Intel says is that it won't support a single DDR RAM module of more than 8Gb each but you can have up to 4 of them on the R3.

You can have up to 32Gb of RAM on the M17X R3. Not sure where you get your 12 from.
