so here is my question....
i have a R3 with a RAID0 config. i want to take out both drives, but in a single drive (probally a SSD). then i want to remove that drive and put back my 2 raid0 drives and have it still seen. Can i do this?

Yes,you can do that just change the BIOS setting to RAID 0 back when you're going to get out the SSD and puy the original Hdds in.
When you install the SSD (if it's going to be alone) you can choose whatever, i recommend AHCI (I know Dell ships systems with the RAiD setting on even for systems with a single drive).
Aren't you going to keep the SSD?

thanks.....i would keep the SSD but i will be setting up the ssd over time jsut the way i like it, so i will be swapping back and forth in the mean time.....then i will break the raid and use one of the 750 drives as a data drive.

That's a good choice, Steve.
Enjoy your system.
