I am pricing out a new laptop to replace my old inspiron 9300 and I haven't paid attention to laptop hardware. With the 17-inch WideUXGA 1920 x 1200 RGB LED (1200p) monitor, I am looking at the I7 720QM and pairing it with the 1GB ATI Radeon™ Mobility HD 5870 or getting the 5870's in crossfire but I am unsure if the crossfire is going overboard and the CPU would be too slow or not.

The things I have read about it suggest that when playing games at 1920x1200 with high enough settings, the impact of the processor is minimal. The 720 should not bottleneck either of those.

The vast majority of games will not be bottlenecked whatsoever by that processor.

Crossfire 5870s is really the way to go, as it will seriously boost performance in a lot of games. Really, 4870 crossfire is better than a single 5870, if you can't afford dual 5870s.
