let's say i get a single SSD with a m17x.. when it arrives.. am i able to add a HDD? will there be a 2nd slot for a new drive (in case i get cheated by sales rep =D)? and will i have to raid it..?
along with that will it be possible to add a graphics card in the future by myself if i just got 1 at purchase?

They would have to be two SSD drive and the slowest of the Raid drive will control the speed of both drives. Just to add one more Point to this. If you use a SSD drive and Hard drive It not a good idea to raid them. Becuse the hard driev will make the ssd drive slower. But you can set them up in a C:\ drive and D:\

If your going to have an SSD and an HDD, use the HDD for storage. So to answer your question, yes there are two slots in the M17x for two HDDs. Install the SSD as a program/OS/boot drive, and a secondary HDD as a storage drive.
Also you can add a GPU later, but your going to be paying so much more. It's a lot cheaper just to get a dual GPU setup from the start. If your going to want two GPU's, that save money one something else and get the dual GPUs when you order. -
i guess the real question is, is the second hdd caddy included if you only order the system with one hdd?

The single 5870 comes with a 150W power supply so you will have to buy a new 250W power supply if you upgrade to CF later. The charger, CF connector and extra GPU will be double the cost as opposed to buying new with dual GPU. Save your money on antivirus and use the free microsoft security essentials. Replacement GPU's and Screens are always expensive because manufacturers would prefer you buy a new computer every year rather than upgrade.
