Mechanized Menace Lost in the MYST
I think that you can do eyefinity using the LCD monitor as one of them but not three seperate monitors.

I found some very helpful instructions in the help sections of CCC but I just can't the button its talking about, has anyone here actualy done it?

You need (technically) three external monitors to do Eyefinity with the m17x.
The m17x has three ports - DisplayPort, HDMI, and VGA.
If you have three monitors (preferably identical) that support all three of these inputs, then you can use Eyefinity.
Remember that Eyefinity requires the monitors to be of identical resolutions, and thus of identical sizes (Well, it doesn't NEED to be the same size, per se, but would be dumb and annoying if it's not).
It would be difficult to find 2 more 1920x1200 17" monitors, I assume.
Pulled this off the yewtoobs:
YouTube - Alienware M17xR2 Proof of ATI Eyefinity with Bezel Compensation -
very interesting video! Coolness factor to be sure.

Although based on the comments in the thread linked above, crossfire needs to be disabled for it to work correctly.
Not sure if that has changed with newer driver releases etc.
