I would do a search, but this board search engine could use some work.

Is it possible to have two external monitors run off the M11x? I could use one display port and hdmi for the other. Is anyone doing anything like this?

AFAIK, the answer is no, I seem to remember seeing this topic elsewhere. I can't do it on my R1 for sure but I'm not sure if they changed it in the later models.

    Which version do you have?

I tested it on the R1 with stock drivers and you can only run 2 screens, whichever you want: VGA, HDMI, DisplayPort, Screen. Pick any 2.

I tested it on the R1 with the experimental (and awesome) Optimus drivers, and I got all 4 screens running at the same time. The only problem was that I had a crazy assortment of screens: a 21" Cinema Display (I found it in the trash), a black 18" (found that one in the trash, too), and my buddy's brand new 23" screen. It worked awesomely.

On my R3, I have not tested it at all. I think I remember reading that someone got all 3 outputs to work (Screen, HDMI, DP) at the same time. If you need me to test it, I may be able to tomorrow. But I expect someone will be along directly to tell you that they've already tried it.

Ditto the above... R1 I'm using with optimus style drivers is using 3 screens and has been tested with 4.

If you count the built in screen I think your R3 can use 3 also.
