For some reason i cannot see more than 512mb of memory on my R3 when i have the 2gb i7 model when setting up Empire Total War. This means that i can only set the game to "Medium" and that "High" and "Very High" are greyed out.

Shogun 2, otoh, allows me to set the card to "High", but not "Very High".

Anyone have experience with these games?

Huh. Weird, check that you whitelisted bOth games and make sure they are running in dx 10 or 11. I have no problem cranking up the settings on my r1. (though I end up getting 6fps :( )

I was really wondering if others with the R3 could at least SEE the High and Very High settings as being available, and in Shogun 2, if they have it, what is listed as the available video memory.

you should see the options, if you cant see the options past mid, then the game its not recognizing your video card
I see you already try whitelisting the .exe?
    setting to max performance mode?

and finally I think theres a command line for the steam launch options that let you go past mid settings
