So I bought 8 little ram heatsinks from ebay and with them placed on the gpu main sink and they actually raised the temps by about 4C.
Maybe the stock glue/paste/adhesive kajigger isn't very good?.. idk
Anyone know how this could be possible? It seems to me like it should be cooler because the heat has more surface area to dissipate..

got any photos Maximus.....Ive never looked back since using thermal tape on the heatsink.....
my cpus idle from 35c -39c and never get above 80c(only when scnaning, unpacking archives) and only hitting 60c - 70c in gaming.

Your temperatures went up for a reason. The reason is this.
By installing the metal shims on the memory, you caused the heatsink to lift up off the core of the graphics card by a small amount. Maybe 50/1000ths of an inch or so. This will cause temperatures to rise, since air is less conductive than metal.
Try using thinner metal pieces, and gauge them so that they fit properly. Than test the temperatures again and see how they are doing

this is how the some people modded there whitebooks/m17 to cool it better which worked for everyone.
i'm in class so ican't pull all the info from project freeze but here's the results from scook9(he was using a cooler i believe so i don't know if it counts or not)

I am well aware of those projects, they are nice day to day projects, but seriously those mods are not professional.
If you want it to be cool, upgrade the fans or custom mill new heatsinks out of copper. Both can be done, and either would be more effective at dropping temperatures
In my experience, the copper used in aftermarket desktop and laptop heatsinks are close to 55-60% copper. You can buy 98.7% copper, it is very expensive. I milled my own custom heatsinks for my homemade laptop project out of copper 3897. Each block cost $300 (3.5" cube). Purity comes at a price, and no laptop computer manufacturer uses them because of the premium one needs to pay.

its handy if you are, or like myself related to an electrician or electrical engineer as they can often source this type of high quality copper that K-TRON mentioned for free......my brother has brought me home some really good quality copper and the appearance is immediately noticeable by the look and feel of it.
Problem is the pieces he has brought home so far are too thick IMHO. I could be wrong on that but I want it a little thinner. -
can I attach them with AS5? or will they just slide off since they'll be upside down when the computer is right side up..

Really if they're staying at 90 or below you should be happy with that. As you probably will know yourself, quite a few 4850 owners have been having high temperatures whereas your 4850 temperatures are now about the same as my 3870s. (Albeit, I haven't modded at all or replaced stock paste)
