For pure curiosity, if I wanted to return this system after receiving it (as a replacement) on 4/28 would I be able to do it?

Would there be a restocking fee? Could I get AROUND that re-stocking fee?

The return period for AW is 21 days, so you aren't eligible anymore.
If you have issues with your system you can push for a replacement, but that might be hard because AW will try to repair it first.
