Does anyone know if Apple will adopt the Samsung 256GB SSD (on its MBP line) upon its release or if it will wait a while? And should wait for the 256GB version (I'd probably get a 320GB HDD in the interim) or should I get the 128GB version now?

Apple rarely adopts individual components upon release. The product line is kept stable and only changed when the whole thing is refreshed. Apple just doesn't have the volumes of Dell, so they can only allow a limited choice in customization options and keep them static to justify the contract. Apple will no doubt adopt the latest that is available at the time of the next refresh, but in the mean time you'll probably have to buy the SSD and install it yourself.

Does it really matter? There is nothing stopping anyone from swapping the hard drive out. It will probably cheaper too.

I have no clue where you could buy a 500GB 7200rpm HDD at but I know for sure they have 500GB 5400rpm drives if you are interested.
