Is there any apps/programs out there where you can record, say like a lecture, and then have it transcribed into text?

I have a professor who talks extremely fast.

Well there is speech recognition software, but for something like that, specially if he talks fast, you are probably out of luck. They are usually only good in quite rooms with a normal clear speaker talking right into the mic.

You might be able to feed it into google voice.
I was amazed that it transcribed my phone recorded message perfectly.
    PM me if not clear.

    Try GoogleVoice.

I use to do this. However, I found it better if I typed out the recording myself. I ended up learning the material WAY WAY faster than just reading a transcription.
