I want to install a cool app for creating notes on my Mac. Also would like to store some docs along with them.. Have you already tried something? (except Evernote) maybe something with minimalistic design... I'm a huge fan of it ) Any suggestions?

Though not designed as a note taking app, WriteRoom is the one I use, both on OS X and iOS.

if you want to be hardcore you can learn emacs or vim. Both are terminal applications. You can set your terminal to the "pro" profile, and full screen it and launch either application. At that point it will look like writeRoom. Both emacs and vim have a steep learning curve, but are ubiquitous (bundled on every mac and pretty much every linux distribution ever) - and give you a lot of editing power, and all control is done with your hands on the keyboard (fast), rather than having to stop and reach for the mouse and click on nested GUI elements (slow). Might want to try both before committing to learning one more in depth.

I gave vim a try but like you said, it was pretty complex and I just couldn't grasp it to use it smoothly/efficiently. OP said he likes minimalistic designs, so I'm going to assume that he's looking for a simple UI as well.
App for notes. Hard to make a choice..
