I've got a couple of accounts set up in Mail, and I'm anal about keeping a clean inbox. Is there any plugin of which I'm unaware that can automatically move messages in either server's inbox into an archive folder of my choosing, depending on the account?

Hah. Keyboard shortcuts work almost as effortlessly, so there's that.

(eta: if only "copy to" and "move to" didn't have identical sub-menu commands, which screws with the shortcuts. Delightful!)

Well you can do an Mailbox>Archive Mailbox, and then thatll put it into a file. Later you can open it and check the messages.

I havn't actually opened a archived file before, to see how mail handles it, but that's how I've read to backup an imap mail account.

Have you tried setting up a new rule to do this?
I haven't done it myself but its possible to make a new rule that will for eg automatically move emails 1 week old to another place you define such a the on my mac folder.
To setup rules, go to mail preferences, and its the last tab (top right)
