If I have bootcamp on a macbook and download a movie from MAC, can I transfer that into the windows side of bootcamp and watch it? That goes for documents too. If I sent it to my self on email and switch OS, can I open it without any compatibility problems?

You can transfer to the windows side of bootcamp if your windows partition is Fat32, if its NFTS I'm afraid you are out of luck.
Anyways like the rest said, search is your friend, and you are more likely to get your answers faster instead of waiting for replies like this.

what's the difference between Fat32 and NFTS? Is that in the HDD?

It is the file system. For instance, OS X most commonly uses HFS+, while current Windows versions use NTFS. FAT32 was the predecessor to NTFS. OS X can read and write to FAT32, but it can only read NTFS, not write. The major drawback to FAT32 is it is limited to file sizes under 2GB (I believe it's 2).
