I have a testing production environment with Windows 2003 at work.
I run about three Windows 2003 servers in VMWare at a time.
Can the Macbook:
1) Run Windows 2003 in Bootcamp?
2) Run Windows 2003 Virtualized in Mac OS X?

Boot Camp won't work, but you can virtualize it with VMware Fusion.

It won't run very well at all, as MB only supports up to 3GB of RAM.
If you want a server environment, I recommend getting a Mac Pro and stocking it with at least 4GB of RAM. -
As for the original poster, Boot Camp does not include support for Win2k3. -
It does not include support but it does run. You can use Windows XP drivers mostly but not sure if everything will work. You cant use the automated apple install from bootcamp but you can extract the drivers and run them.

I am assuming that the creator of this post will be running some resource demanding server applications on his Win2k3. A Win Server 2k3 with a MS SQL Server 2005 is very RAM hungry.

not entirely a true assumption. some scientific analysis packages only run on server 2003. don't know which, but a few of my friends in the physics and chemistry departments at school have to run 2003 on their laptops just for a couple of programs.
