I'm looking at a 24" 1920 x 1200 monitor.
Can the 8600m (256mb) in the MBP handle that kind of demand?
Is full-out gaming (XP via Boot Camp) possible?

OK, 1680 x 1050 sounds more realistic.

Hmm, that would still be pushing it. You won't get high settings. Depending on the game, maybe medium to medium-low?

Well, mine will power older games like Grand Theft Auto San Andreas and even Drive: Parallel Lines at 1920x1080x32 on my 47" LCD TV. With BioShock, I'm only able to play at 1280x720x32. Anything above that is unplayable. I get about 10 to 30 fps in BioShock with max settings (DirectX 9.0c) at 1280x720x32.

The others have answered this very well, but just a note of interest if you ever wonder; according to Apple, even the MacBook can power a 24-inch display to 1920x1200 fine.

That's cause the GMA950 can power 1920x1200.

Yeaps Fara, that's why I noted it to the original poster, as he seemed a little skeptical if the 8600M GT could power a 1920x1200 resolution.
