I know RAM upgrades don't void the Apple warranty but would a HDD replacement?

I believe it only voids the hard drives warranty.

Sorry, I've got a MacBook. I was thinking of popping in either a 200/250 gb 7200rpm drive in the not so far off future.

The MacBook is fine. It voids the warranty on the MBP, but it doesn't void it on the MacBook. You're set, DITTON! :)

the HDD in the MBP requires opening the whole thing to get to, unlike the MB.

Its more work...whereas the MacBook's is pretty straightforward. Its not impossible, just harder.
