From Apple's Online Store:
If I were to choose "Western Spanish" instead of the default "U.S. English", would I be able to run OS X in english or would I be forced to do it in spanish?
I basically want the software in english and the keyboard in spanish. It seems like a long shot, but I better get it out of my mind earlier than latter.

When you first start up OS X, it allows you to choose the language, regardless of whether the keyboard is English or Western Spanish. You can use an English keyboard on a Mac in Chinese

You can even change the OS language anytime you want. The system menus and some of the software will switch to the new language next time you launch it. I sold my old iBook to a French friend and my old iMac to a Portuguese one and that possibility made things much easier.
