I'm buying a 13" MBP 2012 for my sister.
I just want to confirm, a 9.4mm 2.5" ssd will fit, right? No need to get the 7mm version?
Additionally, it has two ddr3 dimms, so i can upgrade the ram to 2x4gb=8gb easily, right?

I believe you mean a 9.5mm drive, but yes it will fit. You are correct, it has 2 DDR3 slots for memory, so it can easily be upgraded to 8GB's.

I have a macbook pro early 2011 edition, 2.7 ghz. What is the best brand/model to use when looking for an SSD for my mac? Also will SATA to usb work for the former HDD?

The best drives at the moment seem to be from Intel, Samsung, and Crucial. Other good options are drives from Kingston and SanDisk. Really, any name brand SSD will work. The only SSD manufacturer you should definitely stay away from is OCZ. Their drives have poor reviews on most sites.

I have a MacBook Pro model MD101, it has a 4GB (2x4GB) RAM. Is it possible for me to upgrade it to either 12GB (1 4GB and 1 8GB) Or 16GB (2x8GB)? I will appreciate any inputs that you can share!

Yes you can mix match, but matching the sticks will ensure they'll run in dual-channel mode which doubles Theoretical Transfer rates.

But in IMAC's they are upgradeable, and use MXM 3.0B cards, or else I wouldn't have people buying them to upgrade their IMACs with them.
Just a small FYI -
I have a mid-2012 MBPro as upgraded as much as possible, 16 GB etc., etc.. currently two SSDs running raid 0, is there any way to fit an M.2 SSD or would I be limited by my current hardware? To me it looks like I'm limited and may just need to get a new one.

There is no benefit of having a M.2 SSD over your current setup at all. I don't think the SSD is your limiting factor at this point, more likely your processor/GPU. a 2012 MBP should be running SATA 6GBPS on both ports, and people rarely need anything faster than that unless you are doing some heavy throughput work
