Just wondering if there's something analogous to the Windows Language Bar in Mac OS X? (just type out the pinyin and converts it to character).

Yeah. You just check the Simplified Chinese button under Input Menu in Internation in System Prefs. The ITABC input mode uses pinyin to construct characters.

Instead of shi shi ni, try xie xie ni. I believe thats the correct form of pinyin.
Personally I hate pinyin and prefer zhuyin fuhao, but thats just me. -
拼音在我的苹果机上赶活。I'm not sure if OS X has support for zhuyin fuhao. There are two other simplified chinese input options called Wubi Xing and Wubi Hua. I have never bothered to figure out how to use them, however.

Now... any ideas on how to translate 75 pages of traditional into simplified, pinyin, and English? (This is a book that will be eventually published...) Figure could just run it through Google and then edit it by hand. -
In Mac OS X, I have a widget on my Dashboard called Translation, where I can paste in bits of text and get it translated on the fly. It supports both Chinese Simplified and Traditional, as well as English.
I think that would be more useful than Google or Babelfish or something. -

Here's a tip: run your Chinese text through a Chinese-English translator (like the built-in one from Dashboard or www.google.com/translate) before posting, to make sure you're actually writing what you think you're writing. -
