I'm seriously considering to switch to Apple (forever I hope), though there's one thing (I'm Mac-virgin so)..
I can sacrifice some software and games, but...
I assume, that ALL hardware available for PC-notebooks will suit for Macbook just fine, right? RAM, Hdd, external devices, sound cards, RAID-massives etc
Everything in this hardware world is made for two kind of people: MAC- and PC- users. Correct?

It depends - not everything is compatable is with Macs - some soundcards, for example, have software only that PCs can run. I think some Macs have special types of RAM, however.

Most should work but you might want to hold off if you can for Apple to release their Leopard series OS since Boot Camp is still a beta version.

when will this be released?

Later this year, probably in Q4.
Problems getting hardware for Apple?
