When I had a mac (still waiting for the mbp update to buy it) I wrote this document that I REALLY need to access now, problem is I don't have Pages anymore, which is what I used to create the document. Is there a tool for Windows that allows me to convert the file so I can edit it with Office 2003/2007?

The answer is...none that I am aware of for certain.

    However, something that might work

If I remember correctly, Pages is really nothing more than Latex ported over to work on OSX. It is possible that Latex could render the file. Latex does not work for Windows natively, but you can get it to run with some effort

Or,perhaps there is a port of Latex I am unaware of.

Either way, if your REALLY need the file, not just really need it, I'd give that a try,,,,how the heck did I end up in a Mac forum?
