I'm reading about the mac firewall and it is talking about this feature. What is it and what does it do?

Boiled down to one simple sentece, it's a means for transmitting data in a secure manner between a computer and remote client. If you really wanted to learn all about the nitty gritty details then you'd need to take a Computer Science class or pick up a book covering this topic

Should I have this enabled or disabled for security? I want to be able to connect to wifi spots and my home wireless network and network with windows based PC's.

Disabled then. Nothing you mentioned needs to have that running. It sounds like that's the ssh daemon too (the server), and not the client. You only need the server portion of it going if you want to log into your mac from another computer remotely with a secure connection.

SSH is for like, remote accessing a computer. I use it all the time to remote access my linux box's and servers.
No need to have it enabled unless you use it. Basically, if you don't know what it (ssh) is, you can disable it.
