I'd like to upgrade the 512 to at least 1 GB. Can I just purchase another 512 stick? Or do I have to take out the original ram and insert brand new ram? What type of Ram does the macbook use?

The MacBook uses SO-DIMM 200-PIN PC5300 (or PC5400) DDR2 modules.
It would be a good idea to pair modules of the same brand, to minimize any compatibility issues. -

I wouldn't use transcend or any cheap ram especially in an apple. Crucial is the best imo and that is what I would recommend-its expensive but not when compared to apple's pricing and its very very good ram

Does the 512 MB Macbook include two sticks of 256 or 1 stick of 512?

Looks to be 2x256...so you'd have to swap out both.

Kingston makes ram specifically tested for the MacBook/Pro but they come at a price.
I have heard good things about G.skill PC5400 and it will only set you back around $83 per 1GB stick at newegg. -
if i have the extended warranty, does adding new memory void this warranty or will they still service it?

I don't think I'd use PC2-5400 here, considering Apple doesn't specifically say its supported, they do say PC2-5300 is good however.
Stick with what the company says what type you should use, it might save you grief in the long run. -
I bought a 1 gig stick of Mushkin, had great success in two different MBP's.
