Just wondering if it matters when I decide to charge the battery, should I at least let it drop to 30% and is it best not to let it drop to below 5% before charging?

I'm been using my macbook for just over 2:30hrs and battery shows 31%, 1:38hrs remaining.

    Thanks.

Newer batteries actually prefer to be topped up frequently instead of continually being run down.

Charge it when you can, simple as that.

Search the forms as this has been asked many times as well.
