Great thread. Hmm.. people have covered most of mine. Hint: You can check "Recent Items" under the Apple symbol for the last 10 apps you used.
I am going to supply reasons for including these apps in my list too because of the apps above that I don't know, I have no idea what they are doing or why I should have them.
3rd party:
iStat Pro
smcFanControl and sfc-3 (my own tuned version of smc - hehehe)
Shimo - If you are forced to use Cisco VPN, this is a life saver
Eclipse - reason I run out of memory with 4GB. Thanks IBM!
Azureus - new name is Vuze but I run it in "classic" mode where it's still good old Azureus.
iGetter - Fast downloads. YMMV but it works wonders where I am because the ISP is limiting bandwidth of single downloads.
CyberDuck - Love it for ssh / sftp sessions because it saves me from having to use vi to edit files. Just open an sftp and hit cmd-K to edit with TextWrangler
TextWrangler! - just as quirky as BBEdit, but it does a few things that are worth its weight in gold, such as converting MS-DOS line breaks to unix line breaks. And regexp search and replace.
OmniFocus - I am just getting into it and I am someone who was never able to use any kind of task management software. But OmniFocus, I am quickly getting addicted to. It's awesome.
Firefox - because 1 browser is not enough
Camino - because 2 browsers are not enough
