so what's the consensus about keeping the battery plugged in all the time? i'm planning to have my laptop plugged in (with monitor, mouse, keyboard) about 80% of the time, and use it on the road 20% of the time. but will that degrade the battery at all?

If it will degrade, it won't be enough to notice. I've got a couple of Powerbooks which are about three years old and very rarely are unplugged, but when they are, they work fine; battery life is fine. Same for a newer MBP that's been around for about six months - battery is used slightly more often, but not really much. It's fine.

the os isnt whats keeping it from degrading, its just how apple lappys are made. they keep the battery from over-charging.

The batteries that manufacturers use today are much more reliable than they used to be...you don't have to be ultra cautious in the way you use the battery anymore. Just use it when you need to, and if you haven't used the battery in a while then use it. You don't have to worry too much over the battery nowadays.
And to Scypher, Macs were made so that you can't overcharge the battery; the battery doesn't start charging until the charge drops below 96%, so you won't accidentally overcharge when you plug the battery in at 99%.
