is there a way to truly maximize the windows so there basically full screen?

It depends on the application. For example, if you press the + icon in iPhoto, the application does go full screen. In Safari, it does not.
If you want an application to go "full screen", the best way is to drag the bottom <strike>left</strike> right corner all the way as far as you can go.

I'm tempted to go to the Windows forum and ask if there's anyway for Vista to auto-zoom instead of maximizing everything
Tile and Cascade are rather poor substitutes for having the window at the proper size with the click of a button

does double-clicking above the menu bar (on the ribbon where the edges of the window is) for each app not work (I am assuming it should be the same as in Windows or Linux or BSD)??

double clicking the title bar, strangely actually minimizes the window to the dock.
you have to understand that OS X isnt windows they both do things differently, i do however prefer my windows to take the whole screen but a one time resize is all it takes. -
Never needed anything apart from dragging the bottom right corner yet though, in my opinion it's just needs getting used to =) -
