I'm using (handbrake) software for conversions to iphone and the heat builds up and even with smc fan control set at 6000 rpms it hits 82 degrees and tops out, is there a notebook cooler for my unibody macbook pro 17", I could get to keep it cooler ?

should I worry about thermal paste drying up on this cpu inside this notebook ?

No problem with that temp. The thermal paste will be fine.

Handbrake video conversion will max out the CPU, which causes heat. Nothing to worry about, it can handle it.

You could get a cooler, I'm not sure what to recommend, but someone will know. It's not necessary though.

My 13" mbp maxes out at around th 80-85c mark, probably normal for it. Although I don't to a lot of encoding using handbrake with it, it should handle it ok. I'd expect the 17" model to handle it better than mine, due to having 2 fans as opposed to 1.
