I am getting an Asus G51VX -RX05, and I want to know what a safe overclock speed is. Stock speed is @ 2.0Ghz.

Yup you should be fine. You need to use SETFsb to overclock the CPU. You could probably push to 2.5ghz or higher but you need to test and make sure temps are stable.

The 260M GTX should overclock quite well as well.

Well, since I don't have it yet, do you think 2.30Ghz can run safely and cool?

Impossible to say until you begin testing it. There is a link in my sig about overclocking, the basis of the explanation about how SetFSB works is the same.
