Just wondering if anyone has done this or could give me some advice on what GPU would be upgradeable into my laptop.

I have the Asus G70S with the 8700M GT SLI setup 512mb.

I have been able to remove the GPU's with some ease to reapply Thermal compound so that is not a problem.

Is there any reason why two 8800M GT's wouldn't work in this setup?

Asus typically uses a reverse MXM standard, so make sure the cards you buy are specifically for an Asus machine and that they physically fit. For example, a G51 cannot use a G71's GPU since it doesn't physically fit. But it would line up electrically if you were to force it in there somehow.
