I know that if I update the video card drivers directly from ATi/AMD I will get GSOD, this is confirmed by multiple people. What I'm asking is, should I just stick with the drivers the laptop came with? Or is there an updated driver I can download that won't give me GSOD?

Update the vBIOS and you can install the latest drivers. Please refer to the sticky and use the search function next time.
