I've owned the G73J-A1 for about 3 months now and I use my laptop at work and at home.
Usage:
At work, I primarily use it for motion graphics (Adobe After Effects, Maya 3D, SoftImage...etc).
At home, I use it for gaming (Call of Duty MW2, Star Craft II...etc).
In either case, I've never had the dreaded GSOD. I've gamed for hours and have successfully rendered lengthy and complex 3D scenes (most renders in excess of 12+ hours).
Question:
I'm currently running stock video drivers and have recently found the need to update the older drivers. Since I have never had the GSOD (or any screen of death for that matter...), do you find this to be a wise decision?

If you have the need, minus well try it. If you get GSODs then you can reevaluate your situation - either try a different vBIOS, or go back to stock drivers. You shouldn't be getting GSODs in stock drivers anyways
