When I'm playing TF2 for 2 hours on my G73 my GPU temps are 77 - 80 celcius max.
But while playing Skyrim for 30 minutes it reaches 100 degrees...
(I play both games on high settings)
Does this have to do with the engine/graphics, do I need a repaste?

Skyrim is not massively GPU intensive because it is a console port but if you are using other such features that stress the GPU for instance anti aliasing that is going to be why.
Even so your temps are very far and wide between I have never seen a 20oC difference between games unless the TF2 which I do not know what game you are referring to is not stressing the GPU.
As Hockey said your first point of call is to clean out those vents/heatsink radiators by blasting them with compressed air as you should not be hitting 100oC at all. -
The problem is that I've just cleaned the vents and I never use AA in games on this laptop...
My idle temp is 68 degrees C
I'll try another contemporary game and report,

I'm very concerned about your idle temps, and even more about your load temps. I idle at 51 C and load at 73-80 C. That includes running FurMark Xtreme Burn-in for hours. Those numbers you've posted definitely aren't good. -
You should be idling below 60oC max. -
68 is way too high for idle.
