Hi guys -- might be a silly question, but is there any way to add an manually add an eSATA port to a g74 or g75?

Typically the only way you can add an esata interface is by expresscard, and there are no expansion options on the G74 or G75. The G75VX will have thunderbolt and that may be an option for esata.
On the G73 there is this hilarious option: http://forum.notebookreview.com/asus-gaming-notebook-forum/534638-esata-g73-via-spare-hd-bay.html -
Google thunderbolt to esata and you will find a couple product that will do what you want.

I would have much preferred an eSATA port over the G75's thunderbolt port... I only have G74.. waiting for G76 I guess.

That would be with haswell towards the middle of next year most likely.
Thunderbolt could have some interesting uses with the right driver development on windows and adaption rates.
