I realize this has been discussed numerous times but after searching as a guest I registered in order to pose my specific question.
I see many people adding another 1gb stick of ram to their a8js.. Can I add a 2gb stick and keep the 1gb?

That memory is compatible, but ASUS lists the maximum supported memory as 2 GB, so adding in a 2 GB stick for 3 GB total might lead to instability (and even if it doesn't, ASUS might try to blame instability on having more RAM than is supported).

so what is recommended? I just got my comp back from warranty service and my warranty is expired so i would not expect asus to deal with the instability
With that should i go with 1 or 2?

OK, I've gone over this before for others - but that's ok. The reason that Asus only lists 2GB as max supported in older models like the A8 is that 2GB sticks were either non-existent or not readily available for them to test during engineering QA.
Many users have added 2GB sticks and are running 3GB total without problems on various Asus platforms; going above 3GB is fraught with difficulties, however. As long as you match frequency of the new RAM to the existing, you will be fine keeping both or just switching to 2GB. The functional difference between 2-3 GB is such that the vast majority of users won't be able to tell during most daily activities, but since both amounts will work and the price of RAM today there's no reason not to. Worst case - you leave the new 2GB stick in and dump the 1GB. Don't worry about dual-channel RAM, it's a non-issue in laptops in terms of performance gains (very different from the desktop realm).
