I've upgraded from 2GB to 3GB RAM on my G1S and now I have the extra memory that can be allocated to my graphics card. I ran a test (forgot what) and it said that I have 1008MB or memory for my graphics card. Does this extra memory turn the 8600GT 256MB into a 8600GT with 1007MB memory?

With my limited knowledge, I'd say that it wouldnt be even 1% faster. From experience, I'd say having the graphics cards rely on system memory too much isnt a good thing.

Short answer: It doesn't and it can't. GPU memory is usually much faster than system memory, and the PCIe bus is used to access that > 256 MB memory. It's simply a fall-back memory, which doesn't matter in a post DX9-with-lost-resources much anymore.
(Yes, I know most games are DX9, but WDDM drivers use a few tricks. Get off my back, or let's take this outside - by which i mean beyond3d forums ;)- )
