How can I accomplish this. I haven't touched windows 8 since the dev previews and so I'm pretty unfamiliar with it. But in combination with UEFI it seems to not want to let me nuke it and install W7.

Going with W8 isn't an option, so please, only help with excising 8 and installing 7 only would be appreciated.

All I've done so far is I've disabled Fast Boot, and Secure Boot Control, and this allowed the DVD drive to be selectable as a boot option, which I set to #1 (before only the windows boot manager showed as an option).

It does boot form the W7 CD, but freezes on the win logo every time after loading files. Am I missing something?

If I take out the drive, repartition it to a blank single partition, and then redo this process will it stop giving me trouble?

NM, there was one more bios setting I changed related to a Legacy CSM and it worked.

Yep just that and Secure Boot = disabled and you're good to go. Nice job! And for the record: Windows 7 will work under UEFI but not on OEM machines with Windows 8 from factory.
